Today in the kitchen I am whipping up a batch of lavender honey simple syrup. I’m a sucker for homemade, all natural versions of my favorite goodies, and I don’t know about you but that purple lavender syrup in the grocery store reminds me of being sick as a child. I love that I can walk out into the garden, pick some lavender and add it to simple ingredients to make my favorite coffee addition. It’s a super simple way to give your home brewed coffee, cocktails or mocktails a little touch of fancy straight from the garden!

What do you need to make Lavender Honey Simple Syrup?
- 1 cup honey
- 1 cup water
- English / culinary lavender buds
- I find dried buds from your own garden have the best flavor, but I did include a link at the bottom of the page to buds I have used in the past
And about 30 minutes, let’s go!
Start by combining the honey and water in a small pot on medium low heat. You don’t want to boil the honey, especially if using raw honey, so that it maintains all those benefits you want your honey to have. Stir until the honey has completely melted.
Once the honey has melted add your lavender buds. Measure with your heart! I typically use 2 heaping tablespoons.
Stir the lavender buds into the honey & water.
Let sit on medium low heat for as long as you wish. I left mine for half an hour, but I’ve also left them in for hours with the heat off.
Store your Lavender Honey Simple Syrup in a jar in the fridge. I prefer keep mine in these darling Honey Bee Mason Jars!
I have read it keeps for a week, but I’ve left mine for longer without issue, and it’s usually all used up before the week ends!

Lavender Honey Simple Syrup
Ingredients
- 1 c. Honey
- 1 c. filtered water
- 2+ Tbsp dried English / Culinary lavender buds
Instructions
- Add Honey and Water to a small sauce pan
- Heat over medium low heat until honey is melted - DO NOT BOIL
- Add lavender buds
- Simmer over medium low heat for 30 minutes
- Using a small mesh strainer strain the mixture into a 16oz jar
- Store in fridge for up to a week
Notes
I use 2 heaping tablespoons of lavender, measure with your heart!
You can leave the lavender buds in the honey / water mixture for longer. I sometimes will turn the heat off and leave it to infuse for a few hours.
